Banana Cake
• 3 cups flour
• 2 cups sugar
• 1 tsp salt
• 1 tsp baking soda
• 1 tsp cinnamon
• 3 eggs, well beaten
• 1 1/4 cups oil
• 1 1/2 tsp vanilla
• 1-8 oz can crushed pineapple
• 1 cup chopped nuts
• 2 cups mashed bananas
• Cream Cheese frosting, recipe below
Preheat oven to 350 degrees F. Combine flour, sugar, salt, soda and cinnamon;
add the eggs and oil, stirring just until dry ingredients are moistened.
Stir in the vanilla, pineapple, nuts and bananas. pour into 3 greased and
floured 9" cake pans. Bake for 25 to 30 minutes or until top springs
back when touched lightly on top. Cool for 10 minutes in the pans, then
turn out onto cooling rack to cool completely. Then frost with the Cream
Cheese frosting.
