Slow Cooker Black Beans
This is for all phases of the South Beach Diet
Ingredients
• 1 lb dried black beans
• 1 lg can Meixican style diced tomatoes
• 1 onion, diced
• 3 cloves garlic, diced
• 1 cup washed and chopped cilantro
• 1 tsp salt
• 1 Tbsp oregano
• 1 Tbsp cumin
Soak black beans overnight.
Drain and rinse black beans, put in slow cooker pot.
Add remaining ingredients plus 5 cups water.
Put seasonings on top and stir to mix.
Cook on high for 30 minutes.
Switch cooker to low and let cook for at least 6 hours. |
